When I’m looking for an easy summer dessert, I almost always turn to a cobbler and according to Yahoo! Web Trend Expert, Carolyn Clark, I’m not the only one who’s crazy for these tasty desserts. In the past month, searches have been spiking as people hunt for their perfect peach, blueberry or blackberry cobbler recipe. It’s all with good reason though, as peaches and berries are currently in season.
So what exactly is a cobbler? A cobbler is a baked fruit dessert topped with a batter or a biscuit crust. As the topping is often dropped or spooned in small clumps the crust appears “cobbled” (think cobblestone street) instead of smooth, hence the name cobbler. Pretty cool, eh? (I had a bit of a glass-shattering moment when I finally made that connection!) Take advantage of summer’s bountiful produce with these easy cobbler desserts today.

This peaches and berries dessert bakes up right on the grill and is best when paired with vanilla or bourbon ice cream. To make an easy “oven,” simply cover your cast-iron skillet tightly with aluminum foil.
