#RRWhatchaCookin Featured Cook of the Week: @mckennasfood

Written on January 22, 2014 at 9:00 am , by

Every week, we check out YOUR food photos on Instagram and pick a
“Whatcha Cookin’ Wednesday Featured Cook of the Week” to appear on our blog and have a chance to be featured in a future issue of the magazine.

If every meal looked as beautiful as @mckennasfood‘s Vegan Asian Salad, we’d go vegan in a heartbeat! This dish proves that with a little color and a lot of healthy and hearty ingredients like snap peas, avocado, mandarin oranges and almonds, you can turn an average salad into something extraordinary. Our own version of this salad may even make its way into our lunch boxes tomorrow!

What a way to start off the morning! Blogger and Instagram user @greedygirlcooks is already gearing up for Valentine’s Day with all-chocolate-everything recipes, including  this drool-worthy Chocolate French Toast! Adding cocoa powder to the batter and making a chocolate maple syrup turns a breakfast staple into a morning masterpiece. We don’t think we can wait until February 14th to try this one out! We couldn’t help but notice Instagram user @inspiredchick‘s vibrant, mouth-watering photo of spaghetti and meatballs, and when we read it was her version of Rachael Ray’s Italian Spaghetti and Meatballs, we knew we had found a winner! There’s never a wrong time for spaghetti and meatballs, but it seems particularly appropriate right in the midst of winter.

Blogger and Instagram user @gracefulleats is baking her way through the alphabet and just so happened to catch our eye at letter C: Creme brulee cheesecake bars. She’s taken two of our favorite desserts and combined them for one amazing piece of sugar heaven. Get the recipe on her blog. We can’t wait to explore what the rest of the alphabet brings her!

‘Tis the season for all things apple! Blogger and Instagram user @urbankitchenla helped celebrate Peanut Butter Lovers’ Month (November) with this Honeyed Apple Peanut Butter Tart with Honey Caramel Sauce and Dark Chocolate. Just reading the title makes our mouths water! And if things couldn’t get any better, the pie is gluten-free and has no added sugar! You can get the recipe for this–and her other organic, paleo and gluten-free treats–on her blog.

As if these waffles and home fries aren’t beautiful enough, our mouths seriously started watering when we read what’s in them. Instagram user @jenjenkk cooked up asiago & rosemary savory waffles with sweet potato home fries and fresh maple syrup. We always love a good B-L-D (breakfast, lunch or dinner) recipe, and this one definitely fits the bill.

This week, a colorful and delicious looking shrimp pasta caught our eyes, made by Instagram user @heddy70. It looks like it’s full of seasonal and healthy veggies and–of course–plenty of shrimp. We love the garnish of lemon on top! You know we can never pass up a good pasta dish, especially one that’s loaded with nutrients and flavor.

We love a family meal that’s quick and healthful, which is why Instagram user @mrsmaurnette‘s chicken parmesan with homemade marinara sauce really caught our eye! She baked the chicken and added lots of fresh veggies and herbs to the sauce, all in under an hour. Now that’s a recipe we can get behind.

The chicken love doesn’t stop here, though. Check out our favorite healthy chicken recipes here.
