Meatless Monday: Edamame

Be a lean, green, protein-eating machine with edamame, one of our favorite meat-free muscle foods! Edamame has approximately 17 grams of protein per cup and is full of heart-healthy fiber, unsaturated fats and antioxidants. You’ve probably seen these green peas as a sushi bar appetizer, but these young soybeans can also be found in the freezer section of the grocery store and are sold shelled or in the pod (just pop ‘em out with your teeth).

 

To cook up these tasty (green) beans for Meatless Monday, simply toss them into your favorite stir-fry. Need a little more guidance?

June is National Iced Tea Month, but today is the day to make your own! Sweetened, sparkling, or frozen, the decision’s yours! It’s summer, and it’s time to sit back, relax and enjoy a good ole glass of iced tea. Below are our top five suggestions to making your glass extra special!  -Nicole Witko

 

Fun Facts About Iced Tea:

  • The oldest known recipe for sweet ice tea was published in 1879 in a community cookbook called Housekeeping in Old Virginia, by Marion Cabell Tyree.
  • Attempting to salvage the hot summer day in St. Louis in 1904, Richard Blechynden poured his brewed tea over ice, and the quintessential English tradition of taking tea was forever changed.
  • In 2003, Georgia state representative, John Noel, tried to pass a house bill making it mandatory for all restaurants to serve sweet tea. Mr. Noel insists it was an April Fools’ Day joke but admits he wouldn’t mind if it became law.
  • Americans consumed over 55 billion servings of tea (over 2.5 billion gallons) in 2007 with approximately 85% of the tea consumed as iced, according to the Tea Association of the USA.

Whether you like your doughnuts glazed, sprinkled, cream-filled or in holes, today’s the day to go out and get yourself a dozen because we’re celebrating the 75th annual National Doughnut Day!

Did you know you can put donuts on the grill?! Try it out with our Grilled Doughnut Shortcakes!

This foodie holiday has a long history, originally created in 1938 to honor the women who served the flaky, sweet pastries to WWII military men, it is celebrated on the first Friday of every June. Not like we need an excuse to indulge! Before heading out to buy your assorted dozen, take a bite out of these doughnut-loving facts:

  • One of Rach’s fave cities, Austin, TX, is home to one of the oldest, most beloved doughnut shops in the country! Round Rock Donuts (originally named Lone Star Bakery) first opened its doors in 1926.
  • By the numbers: 10 Billion doughnuts are made in the US each year; the average person eats 34 doughnuts a year; collectively, we spend $2 billion on doughnuts annually!
  • The most popular doughnut goes to the ultimate classic: Glazed! They sell three times more often than any other flavor.
  • Stack ‘em up: The tallest stack of doughnuts was made with 1,764 rings, measuring 43.5″ high.
  • The largest doughnut ever made was a jelly-filled version that weighed 1.7 tons!

A Better Burger

 

 

We cut this guilty pleasure sandwich down to size by cutting the calories, but not the flavor. To healthify this burger, we added flavor-boosting shiitake mushroom and nixed sodium-busting bottled sauces for flavor-packed tomato paste or chiles in adobo sauce. Pump up the protein and keep the carbs in check by stacking two patties on top of each other and not supersizing the bun too!
